A premix for making brioche buns.

Brioche Mix 2kg
Bakels Instant Active Dried Yeast 0.040kg
Water (Variable) 0.800kg
Butter unsalted (optional) 0.100kg

Method

Brioche

1. Place all ingredients in mixing bowl of spiral mixer.
2. Mix on slow speed for 2 minutes.
3. Mix for approximately 13-15 minutes on fast speed until developed.
4. Finished dough temperature 28-30°C.
5. Allow dough to recover for 20 minutes.
6. Knock back, then scale.
7. Mould into required bread varieties.
8. Proof for approximately 60 minutes.
9. Wash with an egg wash 'Super Glossy'.
10. Bake at 200°C.

Notes: 50g roll bake at 200°C for approximately 10-12 minutes.
